The day came that I had to filet fish. I had to remove the EYES!!! I did great at fabricating my filets, they came out beautifully. I then was taught to make a fumet, getting all the flavor out of that fish. I was also taught to make Trout a la Meuniere. It was delicious and I can say I love trout. Below are my filets. I have learned so much about seafood,their categories etc...lean fish, fat fish.
